The tortillas are fast and easy with the right groove! I make the dough in my KitchenAid in the morning and cover it with a towel. Around 4pm the same day, I preheat two cast iron skillets and separate the dough into balls. I roll one tortilla, throw it right into the skillet, roll out the next one, toss it in the second skillet, flip the first tortilla, roll out the next ball, flip the second tortilla, take out the first tortilla and get the third one going and so on. Once I decided I don’t need perfectly round tortillas, I was able to be real quick with my old marble rolling pin. I can get a whole batch done in less than 30 minutes.

Oh my gosh Lisa it took me two tries to get my sour dough starter going but it finally took off and I made my husband sour dough pancakes over the weekend. We absolutely loved them. So so good. I love making sourdough bread but gave it up because I couldn't stomach the waste from the sourdough starter. Sure, I know there were ways to use excess starter, but it seemed like too much trouble. This, however, is totally inspiring because it flips it on its head. To think of the sourdough starter as an ingredient (which might or might not make bread) in its own right is totally different for me. Makes me want to get mine going again.

I felt the same way but now I only feed as I need. I have a jar of starter in the fridge. Before I go to bed, I take out the amount of starter I need for the particular recipe. I feed it and let it sit out on the counter. By morning it's ready to go. For instance, if the recipe needs 100g of active starter, I measure out 20-25g of starter and add 40-50g each of flour and water. That should give you 100 to 125g of levain. The small amount of extra, put back in the starter jar in the fridge. No fuss no muss no waste. Hope this helps.

I am new to this and received some starter from a friend. Once a week I have been taking about a 1/2 or 3/4 and mix with recipe for bread. I let set overnight and then in morning put a cup of flour and some water and let set for day. Then follow bread recipe. I made English muffins and loved. But I am not sure if I'm doing right. I have a pint discard jar in my fridge but once the mixture rises and I only need a 1/2 cup for recipe there is always extra so I put back in discard jar in fridge. Is this correct?

I saw some videos that explained that sour dough bread has less carbs and no gluten and is easily digested. If we make sourdough tortillas or sourdough cake, are we going to get the same benefits as when making sourdough bread as mentioned above?

I really enjoy a homegrown tomato! 🍅 In our house growing up in Iowa it seemed like the cold weather was marked by Halloween then hunting season, then Thanksgiving, Christmas...and garden planning season. I know that my mom's seed catalogs must have gotten her through many a blizzard! Her birthday was May 6 and she spent her birthday ev year putting in the garden, and wouldn't have had it any other way. That little piece of land in our backyard fed so many people. I hope you are enjoying your new homestead!

Hi! More of a question that a comment:) I have my starter I have been feeding for a week now. It says it needs to double in size, but mine never does. It rises about 1 1/2 to 2". Lots of bubbles, doesn't smell bad. I live at 7200 feet. Does it need to double in size? Or is 2" enough? Thank you.

I have made all these things for my family....They like the bread and the sourdough skillet, but I just made sourdough cinnamon rolls and my kids ate 1 and said, “is this sourdough?” I said yes and they ate no more. I have a pan of cinnamon rolls sitting in my fridge. Yours look like a better recipe, but I don’t know how to get my kids to like sourdough? I’ve literally tried all these recipes. I gave up on pancakes months ago. They don’t eat the English muffins either. I limit bread and sugar for myself but I will eat the pizza crust (which I personally LOVE!) but I don’t know if I should keep a starter if my kids don’t like it. Any ideas?

Just made them today with discard. We didn’t even use syrup lol Incredible flavor to them To die for The pickiest ones put syrup on but they refuse to eat WW and this is 100% WW starter lol If ur starter is not ready it could be too sour. Or u managed to pick up some bad guys in ur starter…

oneworld24 - It is natural yeast! So you use it to raise bread products instead of store bought yeast. Lisa just found a bunch of other ways to use it other than homemade bread loaf.

Joy James - I made my starter from scratch- it’s just flour and water fermented. Lisa has a video that teaches how to do it. If you go to her videos it’s grouped as sourdough. Some people will buy it online, or get some from a friend. I feed mine with equal parts water and flour.

Sorry but your sourdough starter is very poor quality, those 'muffins ' were flat,your bread was flat and the pizza dough just wasnt a pizza dough, awful recipes.

Her starter recipe has produced amazing starter for me (100% whole-wheat flour) The pancakes I made from the discard alone were phenomenal The pizza crust is not pizza crust as you can’t put sauce on it but its good for other things. Try making a boulé with from the starter, that will be nicely rounded, not flat.
