Here in the USA we have a saying, "Use the whole Buffalo." This saying comes from efficient ancient hunting and gathering methods here in North America. I am a follower of this old saying. As a result, I eat "Offal" every time I am offered it; and have even prepared it myself. So, I really like you using the intestines of that large fish for a barbecue. I had never considered offal from large fish before, I am mostly familiar with small fish. The texture you described interests me. If I ever acquire any, I will freeze for 48 hours before cooking. Cooking will destroy any parasites that survive freezing. Give that vendor you bought the clams from a high-five for me. They packaged those clams wonderfully. Top-notch marketplace.
Even as an American, I agree wholeheartedly with eating every part of an animal and I wish it was something we commonly did. ...But my phobia of parasites means you would not catch me dead anywhere near that worm! A sunfish is a deep sea fish, so it's one animal humans don't need to be eating. Either way, it was really interesting to see. Rare footage.
