TAJIMA has the strongest chew on any udon I've ever had! I used to think the chewiness is so important, and I still think so. TAJIMA brings that chew up a level, and it is noticeable. So ordering a flavorful accompaniment will help you enjoy the longer chew time with some good flavor. TAJIMA makes their own udon fresh every day. There is an udon pulling corner at the entrance, and if you are lucky, you may see the master at work. Many other customers also got a rice ball covered in Toyama's famous torero knob (shaved kelp). TAJIMA is hard to find, however. I almost missed it. It's on a small road along the rice fields... easily missed. This is a good udon shop win Tonami! @TastyWaterOM @TravelWhiskers
