Gujarati Patra Recipe:
Ingredients:
• 10 colocasia (arbi) leaves
• 1 cup gram flour (besan)
• 2 tbsp rice flour
• 2 tbsp tamarind pulp
• 1 tbsp jaggery (grated)
• 1 tsp red chili powder
• 1 tsp turmeric powder
• 1 tsp coriander-cumin powder
• 1 tsp garam masala
• 1 tbsp sesame seeds
• Salt to taste
• Water as required
• 2 tbsp oil for tempering
• 1 tsp mustard seeds
• 1/2 tsp cumin seeds
• A pinch of asafoetida (hing)
• Fresh coriander and grated coconut for garnish
Instructions:
1. Prepare the Leaves: Clean and wash the colocasia leaves. Remove the thick veins using a sharp knife and pat them dry.
2. Prepare the Batter: In a large mixing bowl, combine gram flour, rice flour, tamarind pulp, jaggery, red chili powder, turmeric, coriander-cumin powder, garam masala, and salt. Add water gradually to make a thick, smooth batter.
3. Layer the Leaves: Take one colocasia leaf, apply a thin layer of the prepared batter on the leaf. Place another leaf on top and apply the batter again. Stack around 3-4 leaves like this. Roll the leaves tightly from one end to the other. Repeat for all leaves.
4. Steam the Rolls: Place the rolls in a steamer and steam them for about 25-30 minutes. Once done, let them cool slightly before slicing them into 1-inch pieces.
5. Tempering: Heat oil in a pan, add mustard seeds, cumin seeds, sesame seeds, and hing. Let them splutter. Add the Patra slices and sauté for 5-7 minutes until they turn golden and crispy.
6. Garnish: Sprinkle fresh coriander and grated coconut on top before serving.
