This is a great dish to make as an alternative to corned beef and cabbage for St. Patrick’s Day. It is savory and full of flavor and quite popular in Ireland. Your family will love it.

Traditional Irish Lamb Stew
(serves 4 to 6)
Ingredients
2 lbs leg of lamb cleaned of fat and cut into 1” cubes
¼ cup flour
4 rashers of bacon
1 tbsp butter
2 cloves of minced garlic
¼ cup Irish oats
2 large onions sliced
3 lbs of russet potatoes but in small pieces
1 lb carrots sliced
1 tsp dried thyme
1 tsp dried rosemary
4 cups beef broth (or lamb broth if you want to make it from the leg bone)
salt and pepper to taste
Directions
Season the lamb with salt and pepper then dredge in the flour until the lamb cubes are completely covered.
Cut the bacon in 1 inch pieces and fry in the butter until crisp. Remove the bacon and set aside.
Brown the lamb in the bacon drippings.
Add the onion and garlic and cook until translucent.
Sprinkle with the oats and cook for 2 minutes.
Add the potatoes and carrots and cook for 3-4 minutes.
Add the stock, cooked bacon and the herbs and allow to simmer for 2 hours covered until the lamb is very tender.
Serve with Irish Brown bread.
