My wife is of Jewish descent and make it with leftover corn beef, cabbage and potatoes. It is great.

My ex used to make colcannon, but he boiled the cabbage in with the potatoes so they end up mushy. This looks way better.

Interesting! So are you saying colcannon is not an Irish dish, or that the way it was prepared in this recipe is not traditional or not how you prepare it?
