The difference between this and an American fine dining experience is that this probably tastes amazing as well as looking amazing. This is an amazing piece, one of the most spectacular presentations I’ve seen in a long time.

It almost reminds me of looking at my grandmothers old hutch with all her delicately crafted Knick knacks. Except inside each are different comfort foods that bring back floods of nostalgic memories and comforts from over the years.

At time stamp 10:05 the chef serves fish with mushrooms. Does anyone know what type of fish? I have seen it prepared the same way, finely sliced, but broiled and torched before in these videos. Do you know what fish this is?

Almost everything wasn't completely cook. Lots of people eat raw seafood.
