Merry Christmas Jonathan! 🎄 With all the friends you've made here, i'm sure your Christmas will be merry indeed :) 1:50 - Bangus is Milk Fish in English. It's actually our national fish. It's very tasty. However, it's notorious for its bones so very difficult to eat. But you can also buy a deboned one (not sure if you can find one in the wet market.) Btw, just want to share that the Philippines won another award - World's Best Country Tourism Destination in 2022 at the Uzakrota Global Travel Awards (Turkish travel organization). Also, Boracay is Condé Nast Readers Choice Best Island in Asia for 2022. (It was Siargao in 2021.) :)

After watching many videos, I've noticed the people in the markets are EXTREMELY friendly and talkative to foreigner vloggers, but to Filipino's many turn away from the camera. I think that would be an interesting experiment to try, have a Filipino go into a market alone and vlog and see the reactions, then a foreigner go into the same market a bit later and see the reactions. Either way it's enjoyable to see everyone having a good time. I wish you a Merry Christmas.

Its thesame with Filipino youtubers, I'm Filipino so I watch Filipino youtube. Filipinos will talk to the camera, they will even greet their friends who might watch the video. They're even more talkative when they can speak in their own language.

it actually depends in the energy and how you approach the people. I've seen awkward vloggers who does not know how to properly ask people to include them in their vlog, some are arrogant. But most Filipino vloggers i've seen are really just friendly, and it reflects to the people they are trying to include in their vlog.

In kinilaw you should put the vinegar when you're gonna serve it already so the fish will not over cook on vinegar and still have the sweetness and the freshness of the fish. . . When the vinegar gets longer with the fish it will be rubbery getting cook

I agree to one comment below that you don't have to marinate the fish that long. Once all the ingredients are mixed then they are good to go because the vinegar will instantly cure the fish meat. Also when the fish is marinated too long it becomes too soft and soggy and not anymore tasty.

The timing of choosing your fish is perfect,early in the morning,if you're lucky enough the fish may still be alive! Goes well with cold beer,try it! Malasugi is sailfish good for kinilaw too!

you should try pusit(squid) kinilaw.. it is much sweeter than fish kinilaw.. but make sure its fresh, so its juicy cuz if not fresh it will be rubbery..

@@travelescapesOFFICIAL just a fork. I think it was intended this way so you will only get the meat & the other solids in the dish. New tagalog word: PAPAK( elongate the syllable pa, then pa(c)k ). Meaning to eat the viand or ulam without rice.

Kinilaw (ceviche) is an absolute treat especially with some San Miguel Light Beer and watching this prep is asmr for me. I wished I saw the ingredients he placed in the Polynesian marinade. As a Chef, you should start vlogging cooking, People will surely love your take on Filipino Food. :)

I literally LOL when I saw the cat... waiting for the fish 😅 Btw a lot of Filipino, especially the younger ones don't like similar and won't even try it bc the culture is used to eating traditional cooked meat only and the thought of it isn't desirable... even sushi. I love the Italian man... the best taste tester! I appreciate your friendliness to all.

Kinilaw is about eating a fish as raw as it can be. By marinating it, it cooks the meat by the vinegar. As long as all the ingredients are mix together with the fish, you can serve or eat the kinilaw right away and do not marinate the fish or it will not be called kinilaw... By the way jonathan,during filming this, your friend is wasting much of water. Happy holidays. Enjoy your stay in PH. ❤️😎🇵🇭

Eating raw fish could get you parasites. Tuna used for sushi had been known to carry tiny worms that humans may ingest. So as much as I want my kinilaw to be as fresh as it could be, I rather "cook" the raw fish by marinating it in lemon juice, vinegar, pepper, chilies, salt and onions. Better be safe than sorry.
