Depending on the traits of your hired Bartender - there is a trait which means they arrive late to start work, so its possible this is the 'negative' trait which your Bartender has. However, I suspect you hit a bug - as your Bartender levelled up while only you were serving drinks at the bar! You could close the bar - and then reopen, I think that often fixes this issue.
