Very nice, i would add lemon grass to the herb mix. Great idea the mustard with the garlic for the dressing and add a bit of zest from the lemon. Great job and I love your manly BBQ

I find the right seasoning makes trout one of the tastier fish to eat actually.

Fishier it is the longer it is been dead.I suggest you get a fresh one from a fisher market find one that smells something similar to a light river or ocean smell( fresh fish always smell faint of where it has been caught). If you can't get a hold of fresh one you'll have to make due with using herbs/lemon to cut down it's strong fishy taste.
