The duffel bag will be removed once you die or switch sessions in the game, so you will have to re-equip it from your Interaction Menu. You can get the open duffel bag, which allows you to switch between outfits, but in my opinion, it doesn't look that good.

You're not doing anything wrong; just save the merge components above the outfit you saved in "A Titan of a Job" (above the 4th). Launch "Point & Shoot," and it will merge fine. Then, save again at the ammo store and quit through the phone.
