Not sure why FB made it so confusing to literally just make each album private. You can't for example make your folder with profile pictures private for whatever weird reason

The thing I'm struggling with is if someone has a mutual friend with you and they are not your friend, they are still able to view parts of my profile that I do not want them to see :( how do I turn this off so that my profile is completely private even to friends of friends?

When covering what ppl see on our history, that view will not allow us to change the privacy of whats shown. How do we change it?

To change the privacy settings for what others see in your history, you can adjust your activity log settings. Go to your profile, click on the three dots, and select 'Activity Log.' From there, you can review your past posts and change their audience.
