Soda bread is so-named because it uses baking soda as the leavening agent, instead of yeast. It is therefore a type of quick bread, as you don't have to wait for it to rise before baking. A basic, simple, everyday bread, using few ingredients, from a hard working people, meant to keep starvation from the door. I've read that, in Ireland, there's a light and a dark version, and historically it didn't have raisins (that was a "fancier" bread variously called "spotted dog" or "spotted dick"). As times improved, the recipe changed to often include more ingredients, such as butter, sometimes even sugar or egg. Here in the USA, where so many Irish settled after fleeing (if they could) the Great Potato Famine of 1845-1852, we almost always see the light version WITH raisins (unless you go out of your way to seek out and bake yourself a traditional Irish recipe). The slits are placed on top to allow the rather dense bread to expand in the oven without cracking; the slits are so-placed also to represent the Christian cross. I like my soda bread spread with plenty of butter.😋 In New York City, where most of the Irish famine immigrants landed, settled, and many of their descendants still reside, we have a huge St. Patrick's Day parade every year on March 17th (unless it falls on a Sunday, like this year, where it was held yesterday/Saturday instead). There are more Irish-Americans in the US than there are Irish in Ireland, and so people come into the city from all over the NY region to participate in the parade and celebrate their Irish heritage. (In the US, there's a great deal of revelry🍻 associated with the holiday as well.) Among many, many, many other groups marching, you will see the various Irish counties represented, plus the Emerald Societies of the NYPD and FDNY and surrounding communities. Bagpipers, marching bands, schools, colleges, any group, town, or organization that has Irish descendants... which includes just about everybody. New York's parade is the largest and oldest in the world, dating back more than 260 years. (The televised portion is 4 hours long, but the parade continues hours beyond that. So yes, a big deal.) This Irish-American tradition eventually made its way back across the pond, where the first St. Patrick's Day parade was held in Dublin in 1931. Originally purely a religious holiday, even in Ireland it has become more secularized, with the pubs finally allowed to open in the 1970s. And no matter where or who you are, EVERYONE is Irish on St. Patrick's Day! A very Happy St. Patrick's Day to all!💚☘️

🥖 Thank you for telling us about the bread, you saved me from Googling it. Except that now I need to look up a recipe. We have a large Irish population and history here in Wisconsin, especially in Milwaukee. I have a bit of Irish in me, but illegitimately. In 1886, a young German girl and an Irish streetcar conductor produced a love child (my paternal Grandfather, who died long before I was even born) and because he was Irish, she was not allowed to marry him, and of course, considering the era it was, was forced to give up the baby for adoption 😢. I hope someday I'll meet them all on the Other Side. ☘️😊🥖

@CuzKatieSaysSo Enjoyed reading your story, Katie! Ancestry is a fun and rewarding passtime. Though I've always been drawn to all things Irish (music, food, celebrations, landscapes, etc.), I have yet to find any Irish in my lineage, though there is a known branch from Wales (also Celtic). There are plenty of soda bread recipes available online. I've made several different ones over the years and haven't chosen a favorite, but I do remember one from Martha Stewart that was pretty good (I think it makes 2 loaves), and one from one of the Frugal Gourmet cookbooks that I've had for 40 years. I found the info about the real, original, traditional Irish soda bread (both dark and light) online, but I don't recall making either of them. These days, I just go with store-bought.

The traditional Irish-American St. Patrick's Day meal. With potatoes, of course.🥔 When Irish immigrants fled the mid-1800s Great Famine and settled in New York City, they lived in lower Manhattan near Jewish immigrants, who introduced them to corned beef. (In Ireland, it would have been a similar boiled dinner, but with pork.) Hence the tradition of corned beef and cabbage was born. (And yes, I made it for dinner tonight.💚☘️)

@@patriciamorgan6545 I never knew that's where they got corned beef from, thought it was an Irish thing. Thank you for that. And of course with potatoes 🥔😁. We used to eat corned beef sometimes as a child but I haven't had it since. Oh and Guinness Stew 🍲😋
