The Tribal people often talk about eating roti with a meal. Westerners often eat their meals with a roll or some bread and a bit of butter. A roll or some bread goes quite nicely with beef stew. The beef stew I am used to has onions, carrots and potatoes. When I make it I flour bite-sized pieces of beef and sauté them in a pot till they have some color, put the beef aside for later. I use the same pot to start the onions with a little bit more fat when they just start to soften I put the carrots potatoes and beef in with enough water to cover them. I bring it to a boil than turn it down to a simmer cover and let cook, stirring occasionally, until the vegetables are done to my liking (onions disappear, potatoes and carrots are a bit softer than fork tender). If I notice that it isn't thickening the way I like I uncover and let it reduce a bit. The flour from the beef is usually enough but rarely I have to add a slurry or paste. I season the entire time salt pepper every time I add something, sometimes I add a bay leaf or 2.

I like a tomatoey beef stew. My favorite is peachy beef stew, a tomatoey beef stew with a can or two of sliced peaches and the liquid from cans. The sweetness helps to reduce the acidity of the tomato sauce and is really good. Kids love this stew and willingly eat the veggies.

So the difference between soup and stew is the water content. Soups have lots of liquid or broth, stews are thickened. I do prefer all the ingredients to be cut in much smaller pieces. The stew I make has cubed beef, garlic, carrots, celery, onion, potatoes a can of stewed tomatoes, mushrooms and other vegetables like corn, peas and green beans - and of course seasonings. It cooks for hours to marry all the flavors, then thickened. I often add a beef bullion cube to deepen the beef flavor. I also sometimes throw in a hand full of barley. It only gets better when it sits over night in the fridge. The perfect meal on a cold snowy winter afternoon with freshly made bread. OMG Mr C said "its not rocket science"! He has truly been Americanized! And Mr C wins once again!

It was easy but my mother added cornstarch for thickening. It contained 6 things: beef cubes, beef bouillons, carrots, white potatoes, cornstarch, and canned peas. Occasionally onion was added

Amazing. First, carrots! I fight with my wife about the number of carrots. Too much is always better than not enough ;-). Then tender meat! My wife says it should fall off the bone. Melt in your mouth. I agree. But it’s difficult to get a good chunk of meat that will do that. And you have to let it cook, so timing of the veggies is everything. And then , well, how about peas or green beans? Maybe a little spicy pepper? Things my wife forbids in a stew ;-). And these fine gentlemen know all this. What a restaurant they would have! Marvelous!

that's the pure joy of a stew - any stew. we all make it to our own requirements. as I cannot consume animal, I use 'mock duck' or soya chunks. never ever had a complaint. I usually go with the staple of potato, carrot, onion, savoy cabbage, and sliced mushrooms, plus whatever other seasonal veg is around - celeriac is good. for the gravy: a veg stock cube, water, a generous glug or two of balsamic vinegar, teaspoon of marmite and a good splash of hendersons relish (worcester sauce works well with it too). and I make dumplings to go with it (boiled in the pan with the lid on with the other ingredients) and that's made with hard veg fat, a pinch or two of salt, self-raising flour (all purpose flour) and water. I mix with a fork until all the ingredients are combined and then divide into dumpling size chunks. the dough should not be handled - it actually makes making dumplings easier and fluffier. and I serve it in a bowl and add tons of sauerkraut and tomato ketchup. my weaknesses: sauerkraut, savoy cabbage, and potato chunks that dissolve in the mouth. and now I've just made myself hungry! 😋
