GREAT VIDEO: I wish you would have put some heavy load on the shaft as you turned it...the current goes way up...I don't remember how much though. Pin 5 cap is not necessary unless you have a HUGE amount of noise.

What’s the function of diode connection between pin 7 and 6 on the chip ?

Diode is for charging through 1 resistor, and discharging through 1 resistor. Without a diode, it will charge through 2 resistors and discharge though one resistor.

I never tie pin 5 to ground with a cap, cuz lazy 😄but I do have a circuit that I built in which I am hitting the 555 with CV via a push button, and I am getting lots of bouncing interference whereas this was not a problem on the breadboard.

Yeah, that's kind of when I add certain stuff to the board for videos. When I can pop it out, and then something noticeably changes. Too many people demand a 5 to 10 word explanation of everything they can see on the board, and then start interrogating you about it if you can't give a quick answer. Big waste of time when that happens.
