"How is there electricity?" Most large facilities in fallout have some power because they have small fusion generators that operate for centuries.

Even the pip boys are fission powered and last anywhere from decades to up to 1000 years in (fallout) theory... one of the only non-nuclear things in the fallout universe is the vertibirds they never go into detail on the show or the game, but it is hinted they are combustion (of some kind) powered.

The "mashed potatoes" probably came from the Preserved "Instamash" product which is rad-free. Regular Instamash on the surface is full of rads. However, there are no actual Potatoes left since they are seemingly extinct according the BOS. Though they did exist earlier in FO3. But 10 years later, none can be found in the Boston area. (except that one FO4 character named Abigail specifically mentions potatoes in her comments). But what exists now are "Tatos" which are genetically modified tomato plants cross bred with potato plants and apparently taste really bad. I'm guessing that Preserved Instamash is a 200 year old pre-war product which never expires. But regular Instamash can be manufactured from Tatos.

I like Maximus. In his defense you have to understand, Maximus was raised to be a child soldier and has no experience with trust. He was regularly beaten up and subsequently beaten up in class by his teachers. Nobody wants the experiences he had.

Based on lore of the games, there are about 120 vaults. Fallout 4 was vault 111.

To be more precise, the US government commissioned Vault TEC to build 122 vaults. It is not known how many or whether additional ones were built

One of them appeared to be in Annexed Canada territory according to one Vault-Tec map I saw. But it will be interesting to find out how many vaults there will be in the upcoming Mod, "Fallout: London". Perhaps built by Vault-Tec's international division. Or perhaps by another corporation altogether? The Umbrella corporation maybe?

Yes and the sign says first capital of the NCR, which means there is a 2nd capital. Was an awful waste of a GECK though in nuking Shady Sands since it was started with one.
