Spinach is what's known as a histamine releaser. It's actually low in histamine itself but they're saying it can release histamine. The studies on releasers are limited and they don't have sufficient evidence to conclude that it does release histamine. Here is a link: pubmed.ncbi.nlm.nih.gov/16093574/ However, Jennifer below mentioned pineapple and I totally missed that. Pineapple is a food high in histamine. I'm changing the caption in the video.
