It just became a Paradox that the world shifted to allow to exist. Ei does not remember him at all. He was still technically created by her but she doesn’t know it and no one else does either. Actually a good example of this is shown at the very end of the quest. With the broken glass. There was no longer any reason for the glass to be broken because Paimon only broke it because of something related to Scaramouche. Which she doesn’t remember. But it remained broken even after the world changed. Some things remain in the changed world even if they don’t make sense.
