this video, I am not exaggerating, changed my life. i idolize rinella and this video introduced me to ruhlman, who wrote the book Charcuterie. that book changed my life. I have since built my own dry cured chamber and tried the most amazing recipes. it became the greatest hobby I have ever had. I spend most of my weekends thinking about and trying out new meat recipes. seriously thank you for creating this video way back then.

That's what that predator is. A bear is a combination of blueberries, fish, etc. If I was to have bear served with a blueberry sauce, it would be the same thing as what Steve Rinella is doing.

@@Bleda412 Thanks. Now I’m drooling. Mind handing me a mop? Blueberry black bear in and elk marrowmellows, fried in blueberry bear fat. A dash of salt and pepper and... well 🤤🤤🤤 Something about eating something that can eat me.. I can’t quite explain the sensation and rush that it gives.

Every time Steve Rinella speaks, I enjoy a strange familiarity with the words. I raw-pickle rainbow smelt, I make smoked summer sausage of my trapped beaver. My life goal is to get to the point that everything I consume is wild! Good stuff!

I own a first printing of his book and have worn it out. I don’t think I’ve ever fully followed a recipe, but use it as a guide. Truly an amazing book! I adore cured meat, whole muscle segments and some of the best have come from berry bears here in Alaska...... Blows the lid off of expectations from non-hunters!! Thank you for this video, keep spreading the word!!

I make something similar with the animals that I harvest. I give a portion to my family for birthdays and holidays. Sometimes it's summer sausage and others it's cured and smoked fish. I try to only use organic ingredients and found that it's the same as when I was little and gave a gift that I made; sure there's better product out there; but this is mine and I feel that's why it's so cherished by my family. Nice job again by educating people Steve!

Why the hell would someone eat a bear? It's supposed to be the other way around. An old nasty bear and predator would be the last thing on earth I'd want to eat.

Just a heads up to anyone out there--its not all about keeping air out of the packaged, frozen meat. If you don't have a deep freezer, or you have a freezer that has an automatic defroster, one of the most important things you can do is wrap your meet with paper! You don't necessarily have to buy freezer paper, you can use any leftover paper bags from shopping and they will work just fine. Steve is absolutely right in his method of double wrapping meat in plastic, but he has a deep freezer. So he doesn't use paper. Without a deep freezer, you absolutely must wrap your meat in paper. In a conventional modern freezer, every time the freezer automatically defrosts itself, it will defrost the outer layer of your meat, which translates to it becoming freezer burnt very quickly. Just keep this in mind, store your meat in paper if you have a defrosting (frost-free) freezer, you can keep it for nearly a year if you do it that way. Even in a conventional "frost-free" freezer. paper is a very good insulator, and it will prevent the freezer from warming up the outside of your meat during the defrost process, and prevent freezer burn. 👍Cheers from Southern Idaho Steve, love all your videos dude.

Ruhlman is the fucking man. He's such an icon to professional cooks and chefs like myself, and having someone like him talk about and enjoying wild game charcuterie makes me even more excited to go on my first hunt this year!

The book by these 2 fine authors and fabulous illustrators is unbelievable. As a hunter and fisherman that rarely eats meat, charcuterie is a guilty pleasure. They nailed it with this publication and presentation.

how long can you keep ground sausage in the deep freezer? online it doesnt say nearly as long as I thought it would. I have some left from last years deer. brakfast sausage

Several years if properly vacuum sealed and you won't even notice it's old. Most people try to eat their ziplock or paper wrapped frozen game meat in about a year.

my instinct tells me this is what i should be doing and eating but the way i've been brought up makes me repulsed at watching the stuff he's producing. not the killing animals, just...hard to explain. don't doubt it's better for a person also, all the cancer going around, i need to look into developing a taste for this type of food.

Well, something you kill, you know it's fresh, and thats theres no chemical preservaties or other substances. There's a difference between frozen and fresh meat, and what he eats is fresh meat.

@@bipedalhominid6815 Don't eat raw bear meat and you never have to worry about that as a hunter. It's very much a black bear problem, I've never heard of it happening with properly cooked bear or especially any deer meat.

In South Africa, we have the traditional offal dish called Skop, which is a portmanteau of the two Afrikaans words Skaap Kop. In this dish a whole sheep's head is cooked in a large oven until the meat is falling of the bone. With this dish it is tradition that the person who cooked it gets to eat the sheeps eyes with a spoon.

Love your show, one question when you make bone in shoulder roast or shank roast is that right off the deer or is it out of freezer. Wondering if you can freeze venison bone in.

Absolutely. You just need to be careful if there are any sharp edges on the bone so that they do not puncture your vac seal bag or whatever method you happen to use to package your meat.

Never eaten bear... I do like venison, though, a lot! I'm pretty much open to trying any type of food, so long as it once had a pulse! Rabbit is goood... so is bison & elk & squirrel & dove & alligator & turtle & ostrich & even freakin' kangaroo. I've tasted all these critters & they all taste GOOD!

That is summer sausage, not salami. The look similar, but summer sausage is smoked, whereas salami is cured.
