Labskaus is maybe the most ugliest dish in Germany but soooo delicious. :) Nice to see you tried some typical dishes from North Germany! I can also recommend "Rote Grütze" and "Grünkohl mit Pinkel" (please don't translate "Pinkel" :D it is not what you might guess! :D) but last one is only served after the first freeze (mostly in november and until february/march) and it is more common in Bremen, Oldenburg and the area around. We like to do "Grünkohltouren" - we hike around, drink some alcohol (because it's cold), do some silly games ("Gummistiefelweitwurf", "Boßeln" etc.) and then eat some "Grünkohl" (kale) with meat (for example "Pinkel").

For many years I avoided to try Labskaus because of the way it usually looks. Then one day I told myself: "What can happen? You only die once." So I tried it and have to admit, it really was delicious. 😄

great that you taste Labskaus. a typical dessert in Hamburg and northern Germany is "Rote Grütze". often it comes with a cupe of vanilla icecream or cream

In my family we eat Rote Grütze with milk. Apparently, it's the Danish way to eat it (makes sense, half of my family is from North Schleswig).

It all looks delicious. So good of you to let Willa try out many different foods. She is turning into quite a gourmet at such a young age. Labskaus (the corned beef and potato) became famous in ports all around the North Sea because sailors in the 18th century often had no teeth and couldn't chew regular foods. But Labskaus slipped down a treat. The slang term for the dialect spoken in Liverpool is Scouse and is derived from lobscouse, which course is Labskaus in German.

the nice thing about the rolled fish you had with the labskaus is, thats a "rollmops" and the best thing to fight a hangover after a party night... when you are up in nothern germany ... you should try a "farmers breakfast"...thats a beast

Damn now I crave Fischbrötchen. It´s just the best when you are up in the north. Little side note, since you also learn the language. Matjes can be easy pronounced, if you think of the Ma in marine, then a t and a yes. So just Mat-yes and you have it. ;) Also language wise, the little pickled fish roll is commonly called Rollmops, which would directly translate to rolling pug. XD

@@OurStorytoTell a little insider tip: if you want the best Franzbrötchen, you have to go to aldi nord as soon as they open in the morning. They have the best warm and sweet Franzbrötchen ever ! with a little caramelized sugar on top :)

You can get Bismarckhering or Rollmops and Brathering in every german supermarket in glases. Bye (or make) some Remoulade, cut some white big onion rings and put it in a sliced fresh and crunchy Semmel (Brötchen) - and you can enjoy these delicious Fisch Brötchen also at home in Bavaria. Or look out if your local weekly (farmers) market sells fish as well..

Great tasting episode! I used to buy fresh shrimp directly from the boat when it docked here in Husum. Labskaus is made of ingredients that could be stored for a long time on ships. Potatoes, salted beef, eggs, preserved gerkins, preserved/salted fish and red beets. I like my Labskaus with potatoes, corned beef, mustard pickle (Schlesische Gurkenhappen or Senfgurken). No red beets and no fish. But eggs sunny side up on top. From the pickles I take some of the water to sweeten and soften the beef and potatoe mix. And I mix by hand because I like the chunky potatoe pieces instead of a slush that can be had by infusion. I have no idea where the oil comes from. Never added by me.

Labskaus is a traditional sailor's dish. Everything that goes in has an extremely long shelf life or was available fresh on the ship: Labskaus consists of potatoes, cured meat (corned beef), onions, pickled cucumbers, beetroot and herring. Live chickens were also often carried on ships, so fresh eggs were available. Incidentally, it is the only dish where you traditionally get a beer, i.e. alcohol, on duty in the German Navy!

The rolled up sour tasting hering with the pickle inside is called Rollmops. It's kinda the same as the Bismarckhering which you can also (like Matjes) put into a sliced Brötchen..

Rollmops/Bismarckhering is almost the same as Matjes (both are herring) with the first being a bit sour while the other is more salty (too salty for my taste). both are also available in white cream sauce with cut apples and onions, eaten with _Pellkartoffeln_ ("peeled jacket? potatoes") and i could eat a ton of it :-) luckily i can select which of those two types of herring to buy and eat :-)

The form of a Franzbrötchen differs from bakery to bakery. Usually it is made like puff pastry but from a dough with yeast in it. That dough is rolled out thin and then folded with butter inbetween and rolled out again several times. then the cinnamon/sugar mixture is added and the dough gets rolled up and sliced into parts. These parts are pressed down or to the side with a thin wooden tool, like the grip of a wooden cooking spoon. Depending on how much pressure is used and if the pressure is applied in the middle or to the side, the Franzbrötchen then gets its form which is characteristic for the specific bakery. I think the more "industrial" the make is, the more flat it is. smaller bakeries often have "taller" Franzbrötchen. Obviously people prefer different styles. I favored the big flat and juicy ones from the "S-Bahn Stores", the ones from "Franz and Friends" or the ones from the "Kleine Konditorei" in Eimsbüttel.

Nemo Barbarossa kennt die "Kleine Konditorei"!? Die machen meiner bescheidenen Meinung nach die BESTEN Franzbrötchen Hamburgs! Auch die anderen Backwaren sind absolut beste Qualität. Würde ich eine Filiale in der Nähe haben, ich wüßte wo ich meine Franzbrötchen kaufte.

The Labskaus I grew up with has pickled Hering, corned beef, onions, potatoes, red beat(?) And pickled cucumber in it. I really really love this dish and it always reminds me of my father. It is ugly but so good

when you get this oily feeling in your moth when eating labskaus. That is when take a bite from the pickle (or the rollmops). A lot of dishes that have a lot of fat in them get served with a pickle to balance it out.

These are shrimps you can only find in northern sea. In a small town far in the north called Büsum they put in a special potato soup. And Labskaus in former times, so 100 year’s ago was made from the reminders of the Proviant of the ships: potatoes which are not so good looking any more, canned corned beef a few eggs and pickled cucumber. Wether you love it or you hate it. I love it. And the best matjes you can find in June in Glückstadt, few kilometres outside of Hamburg, freshly made.

Ah, lobscouse (a type of scouse). Or Labskaus, labskovs, labskoussi, or lapskaus. Basically a North Sea/ Baltic Sea sailor’s/ seaman’s dish with about or more forms as it has variations to its name.

I like the recipe from essen und trinken, it is very easy and cheap (the priciest ingredient being the corned beef, it's about 3€ a can, and maybe the Rollmops, but I only eat eggs with it so idk) and yes it is perfect after a night out

While a chain stote bakery, you made the right choice to buy your Franzbrötchen at Dat Backhus. When my colleague from the south comes up to Hamburg, she has to bring Franzbrötchen back.😄

I assume it was a hard time to try any of the Franzbrötchen as Willa seems to love it... lol. The "design" of the Franzbrötchen can differ a bit but that seemed a typical one for me. I really love them so much!!!! You got the Fischbrötchen probably at the most expensive place in whole Hamburg. I just hope they had real "Nordseekrabben", because they have so much more taste than any other shrimps I have tried. If the Matjes is fresh, it's really yummy. Oh my god, you tried Labskaus? Wow, I love it so much!!! It looks like someone has eaten that already but it's so good! And yeah, it's made with corned beef. I think it's best when you eat it with a bit of everything, with egg, Rollmops and beetroot. I am glad you enjoyed the Hamburg food tour. :)

Hi, you beautiul little fsmily. OH yes, I tried a lot of these street foods, too, when I was in Hamburg iin 2013. I didn't like all of it, but The Matjesbrötchen and the Backfischbrötchen were the best for me. Backfisch is not eaten with a roll but with potato salad and beer. The most legit place in Hamburg for it is Veddeler Fischgaststätte. A non fancy place in the middle of nowhere in the dock lands but for lunch the parking lot is swarmed with expensive business cars.

I like your video and family. As born in Northern Germany I think Matjesbroetchen, Krabbenbroetchen and Franzbroetchen is a must for everyone visiting Hamburg. Backfisch is also nice but Labskaus is for courageous people.

Hey great video I'm from Germany when I'm traveling I always try everything that the Rigonale kitchen has to offer. Here in Celle, near Hanover, there is raw Rolade, sounds strange but an absolute delicious dilicacy. Have fun.

When you’re visiting Sylt, you should definitely take a ferry ride over to the Danish island of Rømø. Not only is the ferry ride really beautiful as you pass by sandbanks with seals but in Havneby, right at the harbor at Otto & Ani’s Fisk they also have the best “Krabbenbrötchen” ever. Seriously the crabs there are another world. And Rømø has one of the broadest beaches in Europe. So that’s also a sight you might wanna check out. 😄 On the other hand, when you travel to Sylt in summer, it’s also faster to take the ferry from Havneby Rømø to List Sylt, as at the Autozug in Niebüll you may have to wait for several hours in order to get on the Autozug to cross over to Sylt. 😄

As a really young boy I visited the harbour of List. We had luck, because the fishermen just came in from fishing. We bought fresh, warm „Krabben“ from them. Can’t remember, that I ate such delicious „Krabben“ ever again

Oh, this is so great. As a german from the north, i'm very annoyed by everybody just tasting Schnitzel, Spätzle and Schweinshaxe. The north is quite often ignored. But, you now know it, the food is great.

Hi guys, I am a German living in Devon / England and I would like to comment about the Matjes Brötchen! Matjes are young herrings caught usual until end of September. the fillets are marinated for a few days in a salt brine with an enzyme from the liver and pancreas of the fish. I just watched four hours of your series and I find your companions very interesting. I lived in Atlanta Ga when Jimmy Carter was elected President and also in Virginia Beach. Keep the videos coming and enjoy you time in Germany.

Franzbrötchen is actually *very* known in Denmark. To be honest, nothing can compete with franskbrød from Denmark IMHO. And if you want fresh food, go to Husum next time.The "shrimps" are called Krabben. Definetely a reason tto visit Husum as you can get the freshly cooked from the trawlers. Matjes is fermented in a kind of salt sole. The herring in the Labskaus is called Rollmops and can be purchased separately in the grocery

@@OurStorytoTell i thought the same thing too. my parents also traveled a lot back then and i knew very early on what a fish soup is and which fish to use. where other children don't know what a carrot or a pepper is. I know it is also a certain education. but I think your child will learn a lot over the years! If I could still travel today I would do the same

You have to go to the Pfalz in the Southwest of Germany at the end of october. The specialety at this time is new wine and onion cake. There are many ways to do this on the german wine road. It is best to drive the road completly from Bockenheim to Wissembourg (France) and look at the wonderful color of the "indian summer"

@@OurStorytoTell If you want to see the real indian summer, do not stay on the wine street, but make it a loop, for example by touring back from Wissembourg through the Pfaelzerwald, which is one of the biggest forest areas in Germany. If you drive all the way up to Ramstein, you could even visit PassportTwo. Lots of red sandstone cliffs to visit, while you are en route...

I'm from Hamburg and I'm Happy you Likes pur local food specialities. I like all of them, even Labskaus, and got hungry by watching. Did you know that Labskaus was invented on a ship where the cook smashed together all the food they had to get over? Think about it and why it is salty.

Another popular fish dish is Brathering. But I don‘t know how popular this is in Hamburg. And wenn you go to Nordsee in Hamburg you should try a Bremer. 😉

Grünkohl and how it is prepared is depending on the region in Germany. In Hamburg in our family we cook it with smoked sausages and Kasseler wich is alted and smoked pork. AND what is very importand caramelised potatoes. After boiling very small round potatoes where put in a pan of caramel sugar and are tossed in it and put with that glacing to the Grünkohl… But there are fought almost religious wars between which kind of Grünkohl is the best…

Regarding Franzbrötchen - Yes they vary someteimes even in the same shop from day to day a bit. In the past was also a more fluffy less sweet one which I havent seen in years now. That one had no swirls at all. In general they differ in sweetness from shop to shop too.

@@OurStorytoTell There are two kinds: "Gedreht" (the swirly one, which you had) and "gedrückt" (pressed). The swirled is the dominant variant these days, but I like the pressed ones better. Less sweet, more juicy. You can still get them at the "Braaker Mühle" bakery chain and some small artisan bakeries.

while my father ate no fish (even never taste tested it) except for fried filet and Bismarckhering/Rollmops and always ordered Schnitzel instead, my mother and i always tried every unknown food at least once when we saw something new during holidays, and then either liked it or never tried again. but at least trying once was obligatory :-) this also seems to be the motto of your entire family, grats!

Labskaus is a traditional dish of the sailors. The traditional meat was salted and dried meat Which was a very longlasting food as well as the salted herring. Potatos were also easy to store on long trips by ship. You should also try a Bremer which is a Brötchen with a "Fischfrikadelle" a patty made of fish.

Iris is right, it is a mixture of things you can take on a boat for a longer journey. Though it is not the most delicious dish and rather reminds of left over cooking.

Welcome to Northern Germany! 👋 Yeah, as good as the fish treats are in Hamburg, you are still 193 km off of the really BEST place for fish in Germany: Bremerhaven. (Locals lovingly call it "Fish town") Here all the fish trawlers land their catch and you can enjoy fish not only as "Matjes", Krabben or "Rollmops", but also freshly smoked out of the factory. "Natusch Fischeteihafe -Restaurant, am Fischbahnhof 1, Bremerhaven, is one of the most famous fish restaurants, but also a lot of smaller, not so posh restaurants located around the Bremerhaven fish harbor serve delicious fish dishes. If you give the fish a mouth-to-gills ventilation, it might even be able to swim again, haha! When in Bremerhaven, take a trip to the "Auswanderer-Museum" and have a look if you find a distant relative. Or visit the "Klimahaus" (Climate House) and enjoy a trip around the world on 8° East Longitude. And I expect your review on North German beer too - 😉 like Beck's, a world-famous brew from Bremen, which now, unfortunately, belongs to Anheuser-Bush. Have fun on the flat meadows of Northern Germany!

I grew up with northern German food. It made me big and strong. Next time you should also try "Kohl & Pinkel" and "Knipp" and "Kanelbrötchen" (especially in Bremen). If your Labskaus was too salty, it wasn't prepared well. Indeed it's made from corned beef, but well balanced by potatoes.

Matjes is the most classic, Franzbrötchen is always a good idea (I like the more swirly shaped), but the prices for north sea shrimps are insane

The matjes are in fact raw Herring filet put in barrel together with some salt brine for some sort of fermentation for some time. It’s name comes from the Dutch for young girls which are called Meisje. It refers to the fact that traditionally only young virgin Herring are used to make it.

The herring i believe is lightly cured. Kind of like cured (unsmoked) salmon.

ha ha northern dishes are really different... I am allergic to seafood and most fish, so i'm out LOL, but one more linguistic hint again: all "A" in German are Arthur A or spanish A. so it's Matjes with arthur A and Krabben with arthur A, you did it perfect on the Backfisch though... just a reminder.... no american a unless you see the two dots on the a becomes ä ! be prepared to find very different food in Cologne aerea or Baden-Württemberg too, you've been to the Schwarzwald already....

Labskaus is one of these regional dishes that are an acquired taste. Saumagen (Palatinate), Handkaes mit Musik (Frankfurt Region) etc. are equally as divisive.
