You should try softening the cabbage leaves in the broth for a bit before rolling like you did for the bean curd. And, try cutting the quail egg in half and let it marinade so that it could soak into the yolk and not so dry.

The vermicelli looked so good! I think the cabbage would also benefit from a light parboiling, same as the tofu skin, like how you do when you make cabbage rolls/stuffed cabbage.

Suggestion… just like the tofu wrap if you but the Napa cabbage in the sauce/soup first it’ll soften and make it a lot easier to wrap. Be aware tho, don’t heat it too long or else it will tear easily. Maybe use the big soon to help you soak it in for a minute to two and then take it out to wrap.
