Don't know if this counts as a struggle meal but if there's nothing in the house, a bowl of rice with canned sardines works pretty well. Especially with unagi sauce and Japanese mayo I usually have a stash of canned sardines since they last years and are decently cheap and nutritious

my struggle meal is spaghetti with canned sardines - actually anything with canned sardines. they obviously don’t go bad so I just buy a load of them and always have them in my pantry. Also banana milk is great, I have that when I’m mental-health wise unable to cook anything. easy and quick to drink and get nutrients.

Used to have bread with butter and sugar from breakfast with cinnamon. Toast the bread and mix the sugar with cinnamon then pour over the hot buttered toast. Raw ramen, ketchup soup, pasta with butter and Parmesan cheese, fried egg sandwhich with ketchup … had them all.
