생딸기를 듬뿍 넣은 초콜릿 크레이프 케이크를 만들었어요~
총 12장의 크레이프를 사각형으로 구워 4장씩 쌓고 그 사이에 슬라이스한 딸기와 생크림을 샌드했는데 색감도 예쁘고 딸기도 돋보이게 해주는 것 같아요~
초콜릿 가나슈 크림은 묵직하면서도 진한 초콜릿 맛을 느낄 수 있고 중간에 딸기가 상큼하게 씹혀 맛 조합이 정말 좋더라구요~
생과일이 들어간 크레이프라서 시간이 조금 지나면 물이 나올 수 있어 냉장실에서 3시간 정도 굳힌 후 바로 빨리 먹어야 신선하게 맛있게 먹을 수 있답니다~
이번에는 사각형으로 만들었는데 깔끔하면서도 정갈한 느낌이 나는 것 같아요~^^

▶팬 사이즈 Pan size : 20cm x 23cm
▶재료
달걀 4개
설탕 50g
소금 0.5g
박력분 190g
코코아파우더 20g
우유 500g
녹인 무염버터 70g
다크 커버춰 초콜릿 130g
무염버터 35g
생크림 300g
슬라이스한 딸기
휘핑한 생크림 230g (+설탕 23g)
▶레시피
1. 달걀을 풀고 설탕과 소금을 넣고 섞은 뒤 박력분과 코코아파우더를 체 쳐 넣고 우유 100g을 넣고 섞는다.
2. 남은 우유를 모두 넣고 섞고 녹인 무염버터를 넣고 섞은 뒤 체에 걸러 냉장실에서 30분 정도 휴지시킨다.
3. 약불로 달군 팬에 반죽을 붓고 넓게 편 뒤 기포가 올라오면 뒤집어 살짝 더 익히고 식힌다.
4. 뜨거운 물이 담긴 냄비 위에 다크 커버춰 초콜릿과 무염버터가 담긴 볼을 올려 녹인 뒤 생크림을 넣고 섞고 냉동실에서 15분 정도 굳힌다.
5. 굳힌 초콜릿 크림을 휘핑하고 돌림판 위에 식힌 크레이프를 올리고 크림을 바른 뒤 다른 크레이프를 올린다.
6. 초코 크레이프를 4장 쌓고 휘핑한 흰 생크림을 바르고 슬라이스한 딸기를 올리고 흰 크림을 바른 뒤 다른 크레이프를 올린다.
7. 한번 더 반복해 층을 쌓고 냉장실에서 3시간 정도 굳힌다.

50g Sugar
0.5g Salt
190g Cake flour
20g Cocoa powder
500g Milk
70g Melted unsalted butter
130g Dark couverture chocolate
35g Unsalted butter
300g Whipping cream
Sliced strawberries
230g Whipped cream (+23g sugar)

I actually made this recipes and it turned out so well!! I did have a bit of trouble flipping the crepes and destroyed a few but with a little trial and error and a lot of mums help I managed to get there. Would advise anyone who attempts to make this to not pour too much batter into the pan. It should be VERY thin or it’ll be difficult to flip. Happy baking 💛

I did this a few days back and this was what I encountered; for anyone who may need it in the future. 1. (It could’ve been because I left it in the fridge for a few days) the crepes were a little foo firm and the chocolate frosting might have been a bit thin 2. I got 15, 6inch/15cm crepes and used all, which unfortunately led to some “cake infrastructure” complications since i used all the crepes and the weight might have been pushing the cream outwards. 3. I didn’t have enough whipping cream so I used 200ml each for the chocolate frosting and the whipped cream Some things I might do differently is 1. Eat it on the day itself 2. Probably use fewer crepes (make 2 short cakes rather than one tall one) 3. Use a bit more sugar in the crepe
