Adding mozzarella is genius! I made a triple batch yesterday and it is spectacular! I have cooked up prolly close to 100 Chef John recipes and this is top 10 for sure on how tasty it turned out to be. Though I am saddened to have live 46 years on this planet thinking my canned cat food tuna recipe was good. And adding insult to injury, I've always had these ingredients in my fridge!! Capers, hot chili paste, mozzarella, etc. Please forgive, for I have sinned! Thank you Chef, you are a life changer!

I'm ashamed to say that I've never eaten a tuna melt in my 50-some years on Planet Earth. And for as long as I remember, I only ate the catfood-kind of canned tuna--didn't even KNOW there was any other kind until I watched an episode of Rachel Ray...please don't judge me too harshly; I plan on trying John's recipe!

+lucy girl If you can't find the fancy kind of tuna Chef John used, at least get Solid White Albacore Tuna in the cans. Not 'Chunk' but 'Solid'. It costs a bit more, but is more like big chunks of tuna instead of that minced looking cat-food stuff.

I just made it, for the second time, exactly as here (and I didn't use catfood, passing as tuna, but the expensive stuff), incl. the chips and dill pickle, and it was outstanding, of course. This guy is the real thing! Always a twist on something familiar. It was beyond delicious. How can a sandwich be gourmet? This was.

At the hotel where I work, I confirm fresh tuna in oil with some garlic. Everything else is pretty close. Smoked cheddar but since we make our own cream cheese we use that instead of the mozza.

As a latchkey kid, when I got home from school, I used to take tuna salad, spread it on a piece of white bread, throw a slice or 2 of american cheese on top, microwave it, then throw another piece of bread on top. That was over 20 years ago. I used to love it; not sure why I haven't made it since all these years later. This looks like a grownup version that I'm definitely gonna have to try! Thanks!

An alternative to cayenne pepper that works really well is just a tiny sliver of whit horseradish. I also use dill weed and instead of white cheddar I use Munster cheese.

I've made these several times since I saw this video. I've really enjoyed the flavour and the portions of this dish. The celery and cheese are a great combo. Made it for some friends one time, they loved it and asked for a recipe.

I made your Caldo Verde soup tonight, Chef John! I had to use some freezer burned sweet italian turkey sausage, some nice andouille sausage, some semi-wilted kale, and frozen homemade turkey stock left over from two Thanksgivings ago, plus fresh potatoes and a nice onion. Sounds awful but actually it turned out to be delicious! Everyone ate lots and I used up the oldest items in my freezer, so THANK YOU! I will make this TUNA MELT for lunch tomorrow! Next time you make this, make sure you put sliced tomato on--you want to do this before you sprinkle the cheese. Then broil, you will yeah angels sing if you do; that's why I do it, but it tastes good with the tomato too!

My favorite tuna that I learned from my Mum is white meat, definitely minced up with celery and green onions. My secret ingredient John is not chili sauce but a tsp. of HP sauce or worchie. Makes a huge difference.NO added salt but pepper of course or you can use white and light tuna. I like it packed in water. Have never added cheese to the mix except for sprinkled on the bread first before toasting or just on top. Try it! Love your show. Tks.

Use the Tonnino brand jarred tuna in olive oil. It looks like that is what Chef is using in this video. It's all I ever use and it is amazing. Canned tuna is simply inedible after tasting this kind. It's amazing and your sandwich won't be the same without it!

Owen Conenna As a guy that lives in Israel, it is competely true. Main concept is not to mix meat with milk. But, for some reason, some people are stupid enough to not categorize fish as meat(really this nonsense is way too common over here), and therefore, for some people this might be kosher.

I make this a lot, but without the capers, or the chili paste. I prefer Dijon mustard and I also add chopped green peppers. I use sourdough bread cause I like the flavour it adds. My step-son who will not eat any kind of fish or seafood will eat this.

I've made this recipe a few times and it is excellent. Today I had no tuna in the house. I did find a tin of Costco chicken. I added a touch of olive oil to the mix using the mayo, celery, onion, cheese and capers. The results were just as good only different. No one even commented when I served this up.

The breads have four ingredients: flour, yeast, salt and water, are really easy to make and are better than anything you buy in the store. +jason pham Try looking for a rustic bakery in your area. You can tell they have good bread, if they have thick unevenly-shaped baguette with a brown crust.

Had that at the Koolina Hotel for lunch with side of the best crispy potato wedges and a greed salad w/dressing and it was a hit...different strokes for different folks and respect everyone's choice to eat it how and when they want to...I enjoyed it. Make it for my family and they love it...thank you food wishes...now with Fukushima and spent depleted uranium in our atmosphere and oceans, we need to help clean it up, so we can eat fresh tuna instead of out of the can...although not picky, will eat it either way...I did not get sexually aroused by this sandwich...different strokes for different folks I guess, goes for that...Aloha.

Never heard of the fish/cheese debacle. I make a cod casserole that has cheddar in it which even the most devout fish haters love. Guess it's sometimes better to be ignorant. I'll have to give this one a whirl. Thanks :) Update: I had it for lunch today and it was quite good. Didn't have the fancy tuna but still good. What I especially liked about it was the buttery crusty toast-totally enhanced the experience. Thanks.
