PIDE RECIPE
DOUGH
1 cup hot water
1 cup whole milk
3 heaping tablespoons yeast
2 heaping tablespoons sugar
1. Mix and wait 5 minute - let it sit
2. Add one egg & 2 egg whites reserve yolk separately
3. Add 3 teaspoons salt
4. Add 5 cups sifted flour
5. Let it rise 20 minutes covered
FILLING
Cook sausage for 5 minutes on medium and then add thinly sliced red pepper
Cook Turkish sausage with peppers for 6 minutes
SAUCE
3 heaping tablespoons total of pepper paste & tomato paste (2 tomato & 1 pepper)
Mix with 1.5 cup of water to dilute
2 tablespoons tomato sauce
1 Tabls pepper paste
1 tablespoon curry
1.5 tablespoon sweet basil
1/2 olive oil or sunflower oil
HOW TO
1. Roll dough out to about 15" X 16.5",
2. Cover dough with tomato sauce
3. Spread cooked sausage and red peppers on top
4. Roll & assemble with cheese,
5. Sprinkle generously with mozzarella cheese
6. Roll up and twist the ends like a tootsie roll12;49
7. Use yolk for egg wash and brush on top of pide
8. Let it sit & rise for another 10-15 minutes
9. place on parchment paper & bake 400 degrees
10. Bake 18 - 20 minutes minutes until golden brown
11. Remove from oven & cover with a dry towel and 2 damp ones on top of dry towel t soften the surface of the dough (crust)
