I really appreciate your fish/food safety comments. As a nurse, I hear alot of my clients complaining of food related illnesses (even in minnesota, where most cooked foods are safe). Its a great reminder that certain foods are only safe to consume under certain conditions and when cooked properly.

Cooks do this hundreds of times a day all over the world. People think we have tough hands which is partly true but you also learn a "technique" for touching hot shit. You can't really explain but there's definitely an art to not burning yourself.

I remember as a little Nissei boy going out of Half Moon Bay and Pescadero with my dad to collect urchins, muscles, and crab. This is was the early-mid 1970's. Then coming home and helping my mother prepare them with umeboshi onigiri and I still make it to this day, decades later once in a long while as a treat: tonkatsu clams. That is one of my childhood favorites. You should do a video on Southern Japanese (Hiroshima, Fukuoka) Ochazuke. Id love to see what a sushi chef's take on it would be using fresh caught coastal ingredients.

Here in Hawaii we have a method of putting all the vana (sea urchin) in a screen stretcher device and tumble them in the water to remove the spines. You should try it, much easier and faster especially if you’re doing lots of vana to prepare.🤙🏽

With those felt shoes, make sure you wash them out thoroughly at home before you go to a new location, especially if you're going to use them in fresh water. There are a few rivers in the US that ban felt shoes when fishing as well.

You should look into buying a cordless light for night filming. M18 Tower Light is a solid light. I use it at work all the time and with a 4mAh battery you’ll get 5 hours of good light. Anyway, love these videos man. Be safe out there.
