My Italian roommate made me pizzoccheri several times. She brought the pasta and the cheese with her from Italy. Omg, I loved it. I thought it was weird to serve pasta with potatoes, but this type of pasta goes so well with the other ingredients... The ultimate comfort food!

Even 14 minutes for fresh pasta is a lot......looks great though!!!

@@37Raffaella I think it's because it's buckwheat pasta as opposed to regular wheat pasta so it takes longer to cook

If you make your own buckwheat noodles ( fettuccine ), add for last few minutes.

i did think it was surprising that the cabbage was still green! My gran used to cook cabbage for that long, when we'd arrive there for Sunday lunch there'd be what i can only describe as a miasma of brassica fumes enamating from the kitchen...

Probbably the best recipe I'v ever made, and I cook for very, very long time (I'm 60). Very simple, but absolutely fantastic! Only problem is that I can't find this specific cheese in my country (Croatia), so I use combination of Gorgonzola and Brie. It works, it's very good combination, indeed. But, if somebody tried something else (better) for substitution, i would be very grateful for sharing experience. Thanks!

They say Fontina is the best substitute. Like you, I cannot get their specific cheese here either.

Gorgonzola and Brie are too creamy when melted for pizzoccheri. You should chose a semi-hard (and not very seasoned) cow milk cheese. Croatia doesn't lack good cheese and I think you can easily find a good substitute of Valtellina cheese, maybe something similar to Težački can be a good choice

Damir, if you can try a smoked havarti or gouda. If you like that flavor (I love smoked flavor), those are great cheeses to try with the dish.

You made the pizzoccheri in the oven, they should not be put in the oven. And the ingredients are cabbage, potatoes, casera cheese (not toma), butter, garlic (but not a ton).
