Just came back from Naples and this dish is famous all over the city! This is one of the few Recipes in English on youtube of this dish. I have eaten it in Napoli where they simmer it for 8 hours. It was a firework of flavors :)

I found it quite hard to find on the menus. I think because it takes so long to make, I did find it eventually in one place but interestingly without onions.

3rd time I've made this (or making it - as we speak). Biblical; that's the only word for it. Making the Ragu with mashed potato this time instead of Gemelli, the type of pasta Gennaro uses in this video (also one of the nicest pastas I've ever had). Adding garlic, I've found, takes this dish to another level.

I have made my sauce this way for years. Always get told I use to.much meat. But man the meat is so tender its a meal in itself. I use tomato paste, sauce and stewed tomatoes. Yummm. Brite my ds think the same. Well done.

3.59 These Le creuset saucepans are incredible. I have one and the food I cook in it is unbelievably tasty. The meat of course come from cows which graze on Mount Pantokrator but still I don't think it is the meat and any other kind of food I cook comes out amazing. The herbs probably because I pick them fresh from the hills of Corfu. I cook very similar food to this.
