Two Ingredient Thin Crust Pizza (Gluten Free)
By: The Jaroudi Family
Ingredients:
1 1/4 cup raw whole grain quinoa (millet, oat groats, farro, rice - any whole grain!)
1 cup water
2 tbsp pizza seasoning
Directions:
+Blend the water, whole grain, and seasoning until smooth
+After you've blended pour half mixture onto parchment paper lined pizza pan
+Smooth batter out evenly
+Bake at 350 degrees for around 10 minutes
(if you make one large pizza you may need more time)
+Repeat with the remaining half mixture to make the second pizza crust
+After crust is cooked add white pizza sauce/spinach or red sauce with veggies!
See below for our spinach and artichoke dip we used!
+Broil pizza for four minutes until white sauce is lightly browned or toppings are slightly wilted.
White Pizza Sauce

Ingredients:
1 cup nondairy unsweetened milk
1/2 cup raw cashews or 1/2 cup white beans cooked
1 tsp lemon juice
1 tsp apple cider vinegar
3 Tbsp tapioca starch
3 Tbsp nutritional yeast
1 Tbsp white miso
1Tbsp garlic powder
1 Tbsp onion powder
1 (14oz) can of artichoke hearts (drained and rinsed)
8 oz frozen spinach
Directions:
+Add all ingredients except artichoke hearts and spinach into a high speed blender and blend until smooth.
+Add blended mixture into a medium size sauce pan and add in spinach and artichoke hearts.
+Cook on medium high for 3 -5 minutes stirring constantly until mixture becomes stretchy.
+Remove from heat.
+Add to your pizza!

I made this with oat groats and it was great! Mine had to cook for almost an hour. I made one large, kinda thick crust. Adding the pizza seasoning made the house smell like a pizzaria while it baked! I also added garlic & onion powders and a little salt to the crust, and topped it with red sauce & veggies. I'm looking forward to trying it with wheat berries next!

Looks absolutely delicious. I have most of the ingredients. I'm going to buy the rest tomorrow and make it. Buckwheat is another grain you can use for the base. I haven't done the following yet but Savanna Stanhope has a couple of similar recipes for bread/crusts on her channel - one quinoa and one buckwheat. Quinoa was her original recipe but she tried buckwheat too and it turned out really well. I'm allergic to quinoa, so I have to try a variation. The artichoke and spinach dip looks heavenly.

Hi Brit: I made this yesterday using white quinoa. I rinsed the quinoa thoroughly before making the dough and the dough still came out tasting a bit bitter. Also the topping seemed to need some more flavor. Love your recipes but wanted to give you some feedback. I think next time I'll try a different grain.

Hello from Canada! 😊🇨🇦 This is my first time commenting. Love all your recipes, and really enjoy your channel. I just made the best pizza dough ever, using red lentals whizzed up in the blender with water. So simple, and soooo good. I've been using quinoa for a while, but I honestly think I prefer the lentils better, it's a little thicker. Give it a try, let me know what you think. 1 cup red lentals soaked over night. 1/2 cup water 1 tsp salt 1/2 tsp baking powder Add what seasoning you want, throw in some nooch, whizz it up, pour on to baking mat, and bake for 20/25 minutes at 400! This looks wonderful! Thank you for the recipe. I know that artichokes have such a wonderful and distinctive flavor, but I haven't found one without ingredients used in the preserving that don't work for me. Is there a replacement for the artichokes that you can suggest? I also won't be using the nut. yeast.

When I made this with lentils, I found that the one I baked on the bottom shelf of my oven didn't stick while the one on the top shelf did. I think if it sticks, it just isn't done enough.

I tried pizza crust, used quinoa, I didn't want it too crispy. It was so chewy. Could I use rolled oats?

So I’m a bit confused. You use raw grain, but you soak it first? So if I used rice, it would be a lot softer if I soaked it first as opposed to not soaking it. How much of a difference in the texture or blending or cooking time would that make?

On my second attempt first failed and came out too liquified so cut the amt of water back 1/4 of a cup and now it’s in smart oven looking more like your presentation. In the directions above for the White Pizza Sauce, it says to add the spinach and artichokes to the pan before heating.. I followed this and mine never got stretchy ( maybe if you thaw and press all the liquid out of your frozen spinach it could work). In a previous video specifically for the dip, she shows heating the blended mixture first, and then adding the veggies, so highly recommend doing that. mine was fail. tasty, but a fail.

I would check your tapioca starch or if you are heating it at a high enough heat. Even with the spinach water it will still work. (I've done it both ways several several times).

I ended up adding LOTS of stuff to the top, including minced onion, sliced (pickled) jalapenos, chopped yellow bell pepper and sliced black olives. Next time I will also add slices of red cherry tomatoes. I think I definitely have a taste for more like your husband with the hot stuff. I bought 3 lbs. of red quinoa just to try this recipe and am glad I did. I will be playing around with making all kinds of pizzas now. Thank you!

I tried it with millet very watery I tried brown rice very watery. The only thing it worked with was pre soaked quinoa. What am I doing wrong?

The water grain ratio might be off -- add more of the grain until pancake consistency is achieved then pour/bake.

I made a double batch of the crust. It smells so good in the house. Lunch for family, including 3 year old grandchild. We topped with homemade quick marinara & roasted veg. Used pourable mozzarella from Brittany’s lasagna recipe.

A quick pizza crust is an essential for a lazy evening in our house. I have been making polenta pizza base With a flax egg to make it stay together But that requires an hours prep time This looks a good option For the "what do you want for dinner?" "Pizza!" evening In Germany we have a dish called "Flammkuchen" or "Tarte Flambée" Originally from the Alsace region I think that might be the "white pizza" you talked about. I think the white sauce will be made in this household soon As I got some organic artichoke hearts in jars recently.

I have a question. When making this or the cracker crust, I find the dough gets stuck in the bottom on the sides of the Vitamix pitcher and the blade. I hate to waste it. Even if a thin spatula, how can I get it out? I was thinking of using my food processor instead, but I don't know if it will work as well.

Do you ever find very tiny 'stones" eating quinoa? I love things with quinoa but every now and then I will bite down on a very hard piece of something. Do you use a special brand of quinoa and have you ever come across this in eating quinoa. Thank you!

haha I tried to make the crackers last night & burned them....1st they were two soft (prefect for a pizza crust lol) then they were still a little wet......THEN I burned them......I love cooking.....Lessons learned.....lol... I Am going to make this Pizza for lunch tomorrow....THANK YOU

I want to make this with a red sauce and veggies but I want something cheesy on top like a ‘regular/normal’ pizza. What do you suggest and/or do you have a cheese recipe that would work?

Pamela Tipton Check out Plantifully Based’s channel, she has a pretty good cauliflower vegan cheese! It’s very “cheesy”. You could also try a cashew cheese or store bought brands like Violife and Chao cheese are good brands. I prefer Violife shreds.

If you soak the quinoa vs using dry quinoa (if I make it last minute and don’t have time to soak), does that impact the amount of water you add? Also, where do you get your pizza seasoning?
