For me the takeaway is,that after this 3-3 joseki, the player the player that took the corner should be aware that there is still aji from the two captured stones. So playing too aggressively and introducing more bad aji is not good or at least one should calculate if the other player can do something by extending.

11:33 If White can't answer the atari, then why go down with White S17? With the sanrensei, KataGo seems to be kind of indifferent about it. Also, I thought White N18 might be better than O18 in this case because the P19 atari is not that relevant (and it has more effect on the top left). And, after checking with KataGo, AI seems to agree.

Actually, it's not a big problem to extend or Atari first. It may vary depending on the situation. If I were white, I prefer extend first. N18 is also possible. I just showed the most common move here.
