I'm really against the notion that good steak "ideally" needs no sauces. If they are selling a product of two things served together, why not enjoy them together? That would be like refusing gravy because good mashed potatoes should stand on their own. You're not wrong, each part should be good, but if the sum of parts is what's being sold, I don't think judging the sum is a bad mindset either. Just my opinion though.

Porterhouse is half filet(filet mignon) and half short loin.. NY Strip is the short loin... NY Strip is actually a rather tough cut of meat compared to the Filet and rib portions.
@chadlevitan78863 күн бұрын
NY Strip is an excellent cut though imo. The problem with porterhouse is that a filet and strip don’t tend to cook together to perfection. One or the other tend to be overdone/underdone.
@JonHop13 күн бұрын
@@chadlevitan7886 Ehh, its okay. Short Lion can be good, but it needs to be either a high quality grade, or, prepared/aged properly. If you get low grade Strip and cook it, it wont be good at all, on the other hand, a ribeye or filet can still be good from a low grade cow. For me, on the cuts the qualify for steaks, its on the lower end. I actually prefer skirt and hanger steaks. BUT, when the grade of the cow is higher, and there is marbling NY strip transforms.
@chadlevitan78863 күн бұрын
@@JonHop1 Fair. I actually prefer prime strip to ribeye. Choice, not so much. But I stand by that a high quality strip is a great steak.

The individual numbers in those rankings are generally nonsense to a point. I mean to be on that list means you're a fantastic steakhouse...the difference between 20 and 45 is completely subjective, might as well flip a coin. I'm a big fan of Beefbar, I love the concept and it's definitely a vibe at the ones we've been to. Are the steaks better than a Keens? No they definitely aren't, but that's totally ok because the steaks (and food in general) are excellent for the type of restaurant it is, which is a scene-y global hotspot restaurant (like a COYA, Zuma, Amazonico, etc) that just happens to be a really good steakhouse.
