Steamed Ube Rice Cake Recipe (Ube Putong Bigas Recipe) Ingredients:
500g rice flour
2 1/2 cups coconut milk (1 big coconut)
1 cup white sugar
1/2tsp salt
1tbsp baking powder
1tbsp yeast
1tsp ube flavor
2 cups water
Steamed Ube Rice Cake Recipe (Ube Putong Bigas Recipe) Procedure:
In a pan, cook 50g rice flour with 2 cups water.
Gradually add the 2 cups water and keep stirring until it's sticky.

Then, transfer it into a bowl and let it cool down.
In a bowl, prepare 450g rice flour.
Then add 1 cup white sugar and 1/2tsp salt.
Mix well.
Gradually add 2 1/2 cups coconut milk and mix well.
Gradually add the cooked rice flour into the mixture and mix well.
Then add 1tbsp baking powder and 1tbsp yeast. Mix.
Add 1tsp ube flavor and mix well.
Cover and let it rest for 1hour.
After 1 hour, the mixture is ready.
Mix again to remove the air bubbles.
Transfer the mixture into a dispenser.
Then distribute the mixture into the prepared puto molder.
Steam in a preheated steamer for 10mins.
After 10mins, remove the puto from the steamer and let it cool down.
Remove the puto from the molder and put them in a serving plate.
For this recipe, I made 30pcs puto using medium size puto molder.
