Hello my beloved KZbin family.😘 In this video, I am making Udang Masak Lemak Cili Api (Prawns & Thai Eggplants in Spicy Coconut Gravy). This is a very popular coconut gravy recipe in Malaysia, Indonesia & Thailand. Its known to be a one pot dish which requires barely any oil. However, this is my way of making this dish. For which I have used Prawns and Thai eggplants (green brinjals) & a little coconut oil as per my preference. You can also use other vegetables like long beans, french beans, or bottle gourd in this gravy. 👩🏽‍🍳❤

INGREDIENTS for Udang Masak Lemak Cili Api (Prawns & Thai Eggplants in Spicy Coconut Gravy)
■ Key Ingredients for Udang Masak Lemak Cili Api
10 - 15 prawns (deveined & cleaned)
3 - 5 Thai eggplants (green brinjals)
6 - 8 pcs red bird's eye chilli (cili api)
2 pcs dry tamarind
2 stems lemongrass
3 cloves garlic
3 inch ginger
3 shallots
3 inch fresh turmeric
1/2cup
2 cups coconut milk (mix thick & thin coconut milk)
salt to taste
2 tbsp coconut oil (optional)
2 sprigs coriander leaves for garnishing (optional)
