It's because the opponent is just better at leg kicks than the other fighter is at defending them. It's the same thing with takedowns, fighters get taken down all the time even if they've been wrestling their whole lives. Their opponent just has better wrestling. You probably check leg kicks during sparring or during training all the time. Great. Now stepping into the cage and checking a kick from Pereira or Martinez is totally different.
