Everyone who has ever had access to potatoes has figured out how to make a potato pancake. Here in Ukraine we call them tertyukhy and today I pretend that I know how to cook them.
Ingredients:
3 medium potatoes
1 medium onion
1 egg
1 tbsp of flour
salt to taste
about 70 ml or 2.5 oz of vegetable oil for frying
Directions
Finely grate potatoes with onion and mix them up. Put the mass in the sieve over the bowl for 5-10 minutes to drain off any excess liquid. Pour out the liquid carefully, there will be some leftover potato starch at the bottom of the bowl
Put the mass in the bowl with leftover starch. Add salt to taste, an egg and a tablespoon of flour and mix them up
Heat oil in a pan over medium heat. When oil is hot put two or three 1/4 cup mounds into it, and flatten them out so the oil covers about a half of their thickness. Fry one side few minutes until golden brown then flip them and repeat
Transfer to paper towel to drain off any excess oil
Sauce in this particular example is greek yogurt and dill but they go with everything!
