(Measuring cup 250ml)
Daniya - 6 cups or 1/2 kg
Red chilli - 1/2 kg
Curry leaves - 1/4 cup
Fenugreek/Methi - 1/2 cup or 50gm
Toor dal - 1 cup or 200gm
Urad dal - 1 cup or 200gm
Chana dal - 1 cup or 200gm
Pepper - 1/2 cup or 50gm
Cumin - 3/4 cup or 100gm
Asafetida - 15 gm
Gingelly oil - 2 tsp
Ghee - 2 tsp

Also, one small suggestion. My elders used to do. Wash kariveppilai and dry it. After drying, along with dhania you can roast kariveppilai also. It will come out very crispy

Veralli manjal is an important ingredient in Tanjavur Sambar powder which you have skipped. Don't know the reason. Otherwise recipe is good. Another 250 gms chilli can be added too if you are not using kundu milagai. Kundumilagai only brings excellent colour to Sambar.

Mam please explain : நெய் & நல்லெண்ணையில் பொறித்தால் எவ்வளவு நாட்கள் மசாலா கெட்டு போகாமல் இருக்கும். வெளிநாட்டில் 1 வருடம் வைத்து பயன்படுத்தலாமா?

Store large batch in refrigerator, it helps to keep fresh and retain flavor also.. I used to this method, storing 100gms only in room temperature.. Keep support and watch our channel.. Thank you Sis..

Madam tanjore sambar powder is mainly based on oldest recipe of Pathare prabhu of Maharastra community and is unique ingredients. Refer ITC sambar podi.

Use airtight container and keep in fridge, upto 1 year you can store that.. Small quantity only keep outside for daily use..

There is no need to put oil to fry keep all things in the sun and store the powder lf fry with oil is not store long time

See the description for ingredients details. Divide daniya into two equal parts. Keep one part separate, take another one and all other ingredients dry roast them, except pepper corns, hing and red chilli. Use 1 tsp ghee for roasting pepper corns and 1 tsp gingelly oil for roasting hing and dry roast red chilli, cool down all ingredients, after that add one part of separated fresh daniya for grinding. Why 50% coriander didn't toast. Why every things not mixed. Red chill, sambar dals, and coriander. What's is the reason.

Fresh coriander gives nice flavor to sambar powder, and before roasting don't mix all the ingredients because each ingredient having different roasting temperature. After roasting only mix all the ingredients with fresh coriander for grinding.

Im using measuring cup 250 ml capacity. It won't give bitter, if you feel bitter adjust your measurement.
