中華包丁一つで大きいもの、小さいものを処理できる技術はいつも感心します。手間暇かかった丁寧な処理がされた煮込みですね。二代目もしっかり伝統を守られているのでしょう。調理された鳥の足先をそのままで見ることや食べることがあまりないのですが、見た感じ食べる部位が少なくても人気でよく出ていましたね。使われている調味料から味の想像ができる料理でした。
