I've been playing with a smoked Mac and cheese recipe for about 10 years. I came across yours and I found the addition of cream cheese solidified what I was missing in the recipe I was looking for! I already know without tasting that this buffalo chicken version will be fire!

Made this tonight, used the Hey Grill Hey sweet heat rub on the chicken instead of the beef rub. That really worked well, next time however I will be adding just a touch of honey to the Buffalo Sauce chicken coating. The sweet really helps bring it together.

Another winner! When I do this, probably in a week, or 2, the only thing I'll change is old cheddar instead of medium. That nice bite of cooked old cheddar should fit right in there.

Why not add some soft bleu cheese to the base and melt it in. You can get the tang and the creaminess too

It's a type of creamer. It's essentially half milk and half heavy cream.
