The acacia is beautiful to look at a listen to. Almost makes me want a baritone.

Favourite is the Spruce Top. Love them both but that's my fav for sound.

The acacia has a nice even tone and volume between the strings. The spruce top has a more "ukulele" sound to it, kind of hard to explain it except to say that it has more of the tonality of a tenor ukulele. I think I prefer the tone of the acacia baritone ukulele, personally. I have a Cordoba 20BM, and I haven't hardly touched my tenor since I got the baritone...

Both have their own unique and pleasant on the ear qualities. Disappointed by the skinny nut width but it does look like that may have been laid off a little by a wide ( looking) string spacing. Overall my ears are saying, a bit more tonal balance across the strings from the spruce top though.

The string spacing does feel wider than the nut width suggests actually.

Yes. We string them with Daddario Clear Nylon Baritone Strings

Why is the string different from a tenor ukulele can they be strung with great?

Yes they can be string GCEA. Baritones have always been traditionally strung DGBE so that they can live up to their name and cocer the baritone frequencies.
