At 07:31, the fruit is cashew apple from the cashew tree. The ripe cashews are crushed by feet (think grapes crushing of Europe) and the extracted juice is boiled and distilled into a local liquor (Feni or Urrak). In small amounts, locals enjoy it and in tiny quantities, it works like a Desi medicine too. I'm sure most tourists coming to Goa have tasted local Feni as a novelty. So it may look weird and unhygienic but it's actually not.

Its not unhygienic because the alcohol gets converted to steam and then cooled off via copper pipes, so its distilled. Sometimes they even do double distillation for a stronger alc %
