Actually they are occupational therapy students! You can see in the second clip the girl is wearing and OT shirt. It is a masters or Doctorate level job. The measurements are to see if the patient has full range of motion and strength in each motion of the hand. If they are limited, it could be due to weakness, stiffness, or nerve injury among other things :)
