One of my favorite parts of these launches is the complex pattern of ice on the liquid oxygen tank and the dynamics of how it breaks off during flight.

Probably dynamic heating from drag. Max-Q is well before that point, but the Rocket is still in the atmosphere and reaching hypersonic speeds. So there’s still enough drag to impart a lot of heat.

You aren't seeing bubbles, you're seeing ice fall off of the vehicle, the second stage uses crypgenic fuels for that main RL10 engine
