I've been dry canning rice, beans etc. for a couple years. I find the best way to ensure the jars are completely dry is to place them in the oven for 15 minutes on 200 degrees while I get whatever I'm canning ready. I put the ingredients into the warm dry jars as I take them out of the oven and when the jars are all filled put them back into the oven for an hour. After an hour, I remove the jars one by one and wipe any residue from the lip of the jar with a clean dry paper towel and put the lids/rings on and let them cool to room temperature. I also place my lids into a pie dish about 15-20 minutes before the hour is up to ensure they are completely dry. It also softens the rubber gasket just enough to get a perfect seal every time. Since I started doing it this way I have had 100% success with all my dry canning. Thanks for the video. Happy prepping!

I have been dry canning for over 50 years. The flour does have hard spots. So when you are ready to use the flour, sift. Works just fine.

I have heard you should keep in oven at 225 for 1 hour & 30 minutes .. how do you do yours? I am totally NEW at dry canning. Thank you 🙏

The flour is giving off moisture when you are baking it. Keeping the lid off allows the moisture to escape.

I also use a small oxygen absorber before I put the lid on to make sure I get a tight seal.

I go ahead and use marker on my lids to identify what is in them and when I'm done I just use a cotton ball and rubbing alcohol to remove the ink... for those who re-use their lids for other projects. I have so much fun watching you and learning new ideas... you truly are a blessing.

The hot air in the jar has pressure because its moving rapidly from gaining energy from the heat source, like a hot air balloon when it inflates. When the jar and air cools down, it basically deflates a bit and the air in it is no longer greater than the outside air pressure, and in fact there is a bit less air in the jar now, like a weak vacuum , and hence there is now less than normal air pressure in the jar, and the outside air pressure will press down on the lid because it's a greater force than the inside air pressure.

When I buy flour, pancake mix and rice I put it in my freezer for at least 48 hours before I bring it into my pantry. This kills the larva that may be in the flour. I have not tried oven canning. You taught me something today.

Bugs will still show up, at a later date. Keep in freezer or dry can with heat is the only way to go for no bugs.

If you don't like labels on your jars, buy the tags that can be tied on and tie them to the neck of the jar.

You leave the lids off in oven because if there is any moisture in the flour it could not evaporate out. I would heat to above 212° because water boils so it can help dry it out better.

This video is a life saver! I am a Pennsylvania girl living in Germany and they are predicting a dire grain shortage here related to the current war. I was frantically searching for ways to store flour because I fear the worst for winter. My biggest problem is I cannot get Ball canning Jars. We use the Weck System here. Hi Tessie! I haven't found any of those jars less than $9 but if you get a coupon from Ball (they do sometimes have them) or from your hardware store that would help. Love this idea and you made it look so painless. I'm going to do this with my whole wheat flour but in quart jars because so often it goes bad because I just don't use it very often and usually only a few cups when I do. Did you freeze your flour before you dry-canned? I've seen other videos where that is done to kill any bugs in the flour. Great video, Tessie and thank you for giving us the confidence to try something new.

Thank you, Tessie. I had never seen or heard of dry canning until I watched a few homesteader videos on some other sites. This is interesting to me. I have recently started baking my own bread to see if I can eat cleaner. This would definitely be helpful to me. The preservatives in some packaged foods wreak havoc on my body from chronic joint pain to celiac type issues. Since eating better, I am better. I look for your videos as much as possible. This was very helpful! I have been watching a number of videos on dry canning, but you are the only one that carefully specified not to go over 200 degrees. I will use my meat thermometer to doublecheck as well. Thank you for that added information.👍😉

I would put jars in 250° oven for about 15-20 minutes to make sure they are dry and sterilized . I would freeze the flour for 1 week before canning

Thanks wasn't sure if I could freeze flower to rid of bugs. Everyone does things different and I just started to do food storage. Gets confusing. Can I use mylar bags n store in 5 gal buckets? I have limited space for jars. Want to use jars for meat n such. I have food saver lots of mylar bags. 20 food buckets...flar iron to seal..just want to know it flower n sugar can go in mylar bags???

Tessie the reason for not putting the lids in the oven for longer than 5min is the temp melts the rubber seal! Also when the jars cool they will give a vacum pop just like boiling will! I have even run the temp up to 225deg. Without hurting the floor! Great video Keep Up the messages

They make a kitty litter that is silica so u can buy that & I sew little cloths packs of it to put in jars as takes care of bugs. Also can do a freeze dry , freeze dry again before storing flours or grains,. Or can do a vacuum sealer to seal jars so that kills bugs too. So 3 ways to kill bugs or larvee already in flour.

Good evening pretty Tessie ❤ I live in Washington state and have a 600 plus sq ft basement Aside from the laundry room I call the rest my pantry lol. I store flour, sugar, dry beans, oatmeal, salt, pasta, powder milk, instant potatoes, pancake mix, etc in 5 gallon buckets. My basement is unheated and I have never had any problems with bugs or rodents. I also have 2 tuxedo cats who are avid hunters. I do store everything in my kitchen in mason jars too. I had to go downstairs to refill my flour and as always it looked beautiful and fresh. I really appreciate having a basement! We are currently looking for our forever home to purchase. I do not know what state it will be in but I do know I want a septic, well, basement and either a wood stove or a fireplace. I would also prefer propane heat, water heater and stove. and the reason why is a couple of reasons. if I have septic and well I do not have a city bill. And propane still works if the power goes out. however if you have a fireplace or wood stove you can always have heat, hot water , and the ability to cook!

Thanks Tessie! I really like the idea of using hangtag labels instead of those frustrating glue-on ones! I think I will use a bit of elastic string to make them easy to slip over the neck.

This is an old video I managed to miss. Thanks for showing me this. I have some flour I stored in the original bag. I have had it for about a year. I opened it last Sunday to make gravy and it taste funny. I expect the fats inside the wheat germ have started to go bad.,or maybe the flour picked up a odor from the surroundings. I will dry can my next batch!

Can you do this with wheat berries? I just ordered 25 pounds and wasn’t sure about putting the wheat berries in the oven that long. But I thought about just using the food savor for them or doing it this way. Isn’t it basically the same? Which is better for longer storage?? Thank you!

You dont put the lids on first because the seals would likely not withstand the high heat.when yiu water bath seal jars the temp rarely gets up above 180 and its diffuse.also you want to allow the air to escape.if you put the lids on first there is still a lot of air in that jar versus a jar full of jam....just the top portion(maybe and ounce of spacel)is air .i could see a jar failing under the pressure of expanding air.

If you put them in a preheated oven at about 175° for about 15 to 20 minutes, it will dry them out completely. Then just take them out with an oven mitt and pour your dry goods in there and put them back in the oven.

Thank you I am canning all my flour rice beans and pancake mix this whole week 😁 where I am going to put all this is beyond me but I will find a place lol also dehydrating all my veggie haul lol this is work by golly can’t wait till all done so I can have my organized kitchen back and feel comfort in knowing reguardless of what comes tomorrow my family has food stocked up. Do u make kefir water to drink as it’s probiotic? It’s inexpensive as u use same kefir water grains over & over forever & they multiply. I like to add tea or kool aid sort of water flavorings in it after its made & poured into pitcher. It’s not alcoholic drink. Look it up

Do you have to wash new jars? Why some people advice different oven temperature? You said less then 200 other pples had said 200,215. This is confusing for beginners

Yes you have to wash dry new jars and over 200 degrees may burn the flour make sure your oven is accurate

It expands when heated. Not much but can cause problems.

No I would not recommend that ,you can keep it very long in a mylar bag with Oxy Absorbers I have a video coming out next week on it The Milk would gum up

Heating the jars without lids is to allow any moisture to escape and allow the heat better flow into and through the content.

When dry canning leave the rings and lids off so the moisture can escape from the jars. Take one jar out of the oven at a time place ring and lid on it and move on to the next one.

I think this is a well explained process and I would recommend your process. You make it seem sooooo easy! I might try this practice. I never understood dry canning, but it makes sense to prolong the shelf life of dry goods, for many reasons. Thank you for sharing your videos!

Becuse the ingredients in complete pancake mix I would think has egg and dry milk already added making it diffrent from straight pancake mix that you must add egg and milk.

Oven canning is now my favorite way of canning! I am getting ready to oven can some corn meal. I want to make pint jars with all of the dry ingredients for cornbread, so cornmeal, flour, and baking powder. It won't be a problem mixing these ingredients will it? Is the processing time the same too?

don't use brown rice for dry canning it has oil in it and will grow botulism
