Unlock the Secret to the Most Addictive Street Corn Tacos You'll Ever Taste!

This street corn taco recipe is one of the very best around - it's quick, it's tasty and you will for sure want to give this one a try! I even share with you my secret to make it the fasted tacos around! Sick tacos you read that right...my kids say Sick is the new awesome!
Mexican Street Corn:
Combine all ingredients in a bowl then refrigerate until time to eat.
4 ears grilled corn
1 diced bell pepper
1 diced jalapeno
3 cloves minced garlic
1 bunch cilantro
1/2 cup cotija cheese
3 TBSP may
1 tsp chili powder
1 tsp salt
juice of 1 lime
Use on top of meat in street tacos and top with chipotle lime ranch

Growing your own cilantro is so easy, I grow it in a pot. And I also let it go to seed at the end of the growing season and let the seed dry on the plants. Then put the seed on top of the dirt in the pot. Then in then in spring I put a light layer of dirt on the seed and let it grow. Of course I live in NW Minnesota, so the seed stays frozen all winter.

We have good friends that taught us about street corn! Her hubby served in Texas. Thanks for the recipe. I will be trying it! I LOVE cotija cheese! I lived in South Texas and was surrounded by Spanish speakers daily. I tried learning, even taking a entry level Spanish class in college. Yeah, they couldn't understand my German accent in Spanish. 😂 The old adage that learning one foreign language helps you learn another isn't true for me. Lol!
