I typically always lower my edge angle to about 17.5 degrees on my EDC pocket knives. I did put a 15 degree edge on one of my Paramilitary 2's. I stroped it all the way down to .05 grit and it's unbelievable. I use it for skinning game and I haven't had any blade damage yet but I'm careful around bone.

Great video! Would have liked to see a bit more about the stropping part. Stropping factory edges does usually help quite a bit and makes them “usable”. Stropping can be super beneficial to the newer sharpener who has a lot of trouble getting rid of the burr as well. You guys should consider stocking Stroppy Stuff, blows the Jende and especially the DMT diamond stropping products you guys stock out of the water.

Ironically, I got a 7 piece kitchen knife set on offer for €1 each, having collected supermarket tokens. The edge could have split hairs, absolutely amazing. My goal for chisels is to sharpen that well, I can make that chisel shave hairs on my forearm but that still not as good!

After i get a burr on one side of my Spyderco folder do i flip the knife over and make a burr for the other side or just remove the first burr.

Ideally you want to make a burr on both sides, that way you know you've hit the apex of the edge from both sides. It can be hard to know if you've created a new burr or just folded over the existing burr, so if you want to remove the first burr before creating the second, that would be fine.

So should I upgrade my precision adjust to the elite or bite the bullet and get the pro (precision adjust(PA)... Or do the elite upgrade on the basic PA and try freehand with diamond or splash and go whetstones? Thanks , Jim

Addendum, I strop freehand daily with compound on leather and freehand hone on my Spyderco sharpmaker the last several years I've had this Spyder sharpmaker more than 10 years

The Pro is sturdier, can handle a wider range of blade sizes and the digital angle gauge is a nice touch. That said, it has the same (but larger) abrasives as the Precision Adjust Elite. The Elite storage bag is nice, and you can get similar results to the Pro, you just need to be gentle. Go with freehand stones if that's a skill you want to learn. Stones are the most versatile but require the most skill. Since getting the Pro, I don't really use my Elite anymore. I enjoy using my stones because I can get right to sharpening, but if I want to be super precise, the Pro comes out.

Personally, I change the angle on every knife I sharpen. In my dark ages (before watching KZbin videos like this, and before 'upgrading' from free-hand sharpening to guided sharpening on a 1 x 30), the angle was best guess. Now, I have had custom angle guides made for 17* and 25.* With the tilt of the table top of the 1 x 30, these two guides can be significantly dropped - to below 15* for the first and down to 17* for the latter. As a general rule of thumb though, 90% of the knives are done between 15* and 17* (small pocket knives, and Every Day Carry knives, kitchen knives, etc), since these are primarily slicing, not chopping knives and 20* + for knives that see harder use/chopping.

Sounds like a good system. Dropping this Kershaw down just a couple degrees hasn't done much, I'm guessing it'll end up somewhere in that 15-17 range you're currently at.

If you don’t worry about sharpness then that’s exactly what you will do. Work. A sharp knife takes less work than a dull one.

This system is not extremely accurate. It wiggles and moves around. I use KME system, its the BEST.
