Unniyappam is a popular traditional snack from Kerala, India, known for its sweet and flavorful taste. These small, round fritters are made primarily from rice flour, jaggery (unrefined cane sugar), ripe bananas, and coconut. Here's a basic recipe for making Unniyappam:
Ingredients
Rice flour: 3 cup
Ripe bananas: 3, mashed
Semolina: 3 tablespoon
Shallot: 2 pc
Jaggery: 1,1/2 cup, melted and strained
Grated coconut: 1/2 cup
Ghee or coconut oil: for frying
Instructions
Prepare the batter:
In a bowl, mix the rice flour, semolina, mashed bananas, melted jaggery, grated coconut, shallots.
Stir the ingredients until you get a smooth batter. The consistency should be like a thick pancake batter. If the batter is too thick, you can add a little water to adjust.
Let the batter rest for at least 3 hour to allow the flavors to blend.
Heat the oil:
Heat ghee or coconut oil in an Appachatti (a traditional vessel used for making Unniyappam) or an Aebleskiver pan (which has small round molds) over medium heat.
Fry the Unniyappam:
Once the oil is hot, pour spoonfuls of batter into each mold of the pan.
Fry the Unniyappam on medium heat until they turn golden brown and crispy on the outside. Make sure to turn them occasionally to ensure even cooking.
Remove the Unniyappam from the pan and place them on paper towels to drain excess oil. #food #recipe #snacks #home
