Urchin Diving for Seaside Snack of Uni Guacamole

Today we go out diving again with Matts (Fisherman's Life) in Mendocino. We look to spear fish, but end up with some sea urchins and a delicious snack.
Sea Urchin (Uni) Guacamole
Ingredients: 15 sea urchin gonads (uni), 2 Avocados, 1/2 red onion, 1 roma tomato, 1 lime, cilantro, salt, pepper
1. Dice avocados, red onion, tomato into cubes and add into mixing bowl
2. Chop cilantro and add to mix
3. Cut lime in half, and squeeze into mix.
4. Carefully mix in half of the uni, and reserve the other half for garnish.
5. Season to taste with salt and pepper.
6. Garnish with remaining uni
