I was always afraid of these kinds of plugins because I heard they could ´break´ the site if not configured properly. Is there a risk with this one?

Unfortunately, there's always that risk. That's why I recommend you save the plugin configuration after every change you make and check to see if the site is still working as it should. For the settings that could really break things WP Rocket also gives you written warning something could go wrong. If you're not using a plugin and you're doing your speed optimization with custom code then you have to deal with the same risks.
