Lovely recipe for the Japanese curry, just a little suggestion from an Indian here: instead of adding honey or Worcestershire sauce which can eff up the smell up of the spices, add two large teaspoons of heavy cream or even milk and half tea spoon of fish sauce and a cube of minced garlic, your food will end up being amazing. Also if you want you can add peas to the veggie mix if you want.

I think what would make it taste better is if you seared the beef, and then make the roux inside the same pot you seared the beef in. That way, you get the fond from the beef, which created more flavor.
