Oh 😮 your version of Teochew Kuyteav 😅… but the original recipe is not like this. We prefer pork-seafood or duck-seafood. The pork meat & organs should be blanched and then rinsed before. You need a broth made of : land meat (from chicken or pork) + seafood (with dried squid & shrimp), as well as salted dried radish and cabbage. Add just onion + radish + fish sauce + crystal sugar. The broth must cook minimum for 3 hours. The Teochew make flat meat patties, while the Hokkien make meatballs. At the end, add cooked shrimp + fried garlic + coriander + bean sprouts + lemon juice + white pepper, and vinegared chili pepper (optional).
